Carrot Cake Overnight Oats

Overnight oats are a perfect go-to, make-ahead breakfast ideal for busy mornings.  They are healthy and full of natural filling power. Making oats the night before is like cooking them, by soaking the oats you are breaking down the starch and reducing the natural phytic acid, helping your body utilize the oat’s nutrients more efficiently.

Carrot cake overnight oats is easy to make and full of flavour. The preparation time is only 10 minutes and there is no cooking involved. This recipe serves 1 but can easily be altered for the whole family to enjoy.

 

Ingredients (for 1 serving)

400 g oats

1 x 175 g Vanilla flavoured yogurt

1 Small grated carrot

½ Teaspoon Mixed Spice

1 Teaspoon Honey

Pinch of Salt

Pinch of Ground Cinnamon

1 Tablespoon of sultanas or dried nuts for topping

 Method

  1. Put the oats into a jar with a lid. Pour in the yogurt, ¾ of the grated carrot and add in the spices.
  2. Stir well until the mixtures is completely combined.
  3. Place in the fridge and leave to cool over night. (recommended chill for at least 5 hours)
  4. In the morning, give the oats a stir, and add the remaining ¼ of the carrot, along with the sultana or dried nuts.
